The foam is soft and abundant with fine and constant perlage. The color is light pink with shades ranging from coral to peach, The fragrance is very intense, complex, with floral notes boosted by secondary and tertiary aromas. The taste is sapid and round. The perfect acid balance brings out a pleasant refreshing touch. The long aging on the lees gives a unique body and volume.
Two centuries of grape harvests make history. Since 1820 Tosti has been producing still and sparkling wines and is a family-run estate which has witnessed seven generations of the Bosca family at the helm of operations.
The grapes are gently pressed and squeezed. The must obtained is fermented at the temperature of 14° C for 30 days. Refinement for 6 months sur lattes with batonnage to obtain the bring these bubbly to their maximum elegance. The wine is thus ready for the bottle aging of minimum 38 months in temperature controlled ambient.
Pairs well with meaty and oily fish.
