Their flagship Estate Cabernet Sauvignon from Dr. Crane vineyard represents the pinnacle of our winemaking efforts. Medium bodied with finesse and focus, this wine opens with notes of black cherry, raspberry, fig and dried rose petals. This wine shows restraint and tension, perfectly built for long aging potential. Our approach emphasizes balance and elegance instead of power and opulence. The texture is velvety without compromising its inherent Cabernet weight, the mid palate is juicy and the finish persistently chalky yet polished. Hints of barrel tones including baking spice and vanilla on the palate mingle with notes of red plum and fennel.
Nestled in famous Napa Valley, our family has been growing winegrapes on our historic St. Helena vineyard since 1932. Originally planted in 1860 by Dr. George Crane, three generations of the Salvestrin Family have meticulously and sustainably farmed this 26 acre vineyard for 81 harvests. Being sensitive to the environment and the surrounding community by following organic guidelines, we consistently create handcrafted wines that are fruit forward, elegant, balanced and memorably world class.
Meticulously crafted and blended in the pursuit of perfection. Cabernet clones 169, 412 and 8 are featured along with Merlot and Cabernet Franc. Grapes are harvested in the cool hours of the night. After destemming and manually berry sorting, we cold soak for 5-7 days at 55F. During fermentation, we perform daily pump-overs and punch-downs depending on the stage of the winemaking. Time on skins varies anywhere from 20 – 35 days. Once the fermentations are dry, they are gently drained and pressed off. The free run portion and press are kept separate and barreled down into oak barrels via gravity. The wines age for over a year before blending. After blending, the Estate Cabernet ages for a total of 22 months. The wine is racked 2-3 times during barrel aging.
