Aromas of green apple and Mexican style cucumber (notes of chili and lime) with a palate of dandelion jam, wet stone, pear blossom, kiwi, and alfalfa. Our acacia barrel fermentation lends to the textured mouthfeel of this wine that is accented by a classic grüner white pepper finish.

The Estate

Illahe is a Chinook Jargon word meaning “earth,” “land,” or “soil.” We feel this reflects both our location in Oregon, as well as our desire to craft wines which express the variety of soils on our beautiful 80 acre estate. Illahe Vineyards was established in 2000 by Lowell Ford, grower of Oregon grapes since 1983.Illahe is a LIVE-certified, Salmon Safe vineyard. We use cover crops on the entire vineyard. We are part of Oregon’s Deep Roots Coalition, and as such do not irrigate mature plants. We do extensive green pruning and conduct plant topping. We prune by hand and harvest by hand. We use sulfur spray to control for powdery mildew and botrytis.

Wine Making

We have a 1.5 acre parcel of Grüner Veltliner on our Estate vineyard. These cuttings came from an original planting Lowell Ford planted in the 80’s on our family farm in West Salem. Those original cuttings came over in a friends suitcase from Austria. In 2021 we destemmed the fruit and soaked on the skins for 24 hours before pressing. After a gentle pressing we then ferment 50% of the juice in acacia barrels to increase texture and mouthfeel and the remainder in stainless.
